Make this easy, one-pan Sloppy Joe Cornbread Casserole for a hearty, budget-friendly family dinner. It combines a savory ground beef filling with a fluffy, cheesy Jiffy cornbread topping for ultimate comfort food.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (8 ounce) can tomato sauce
  • 1/4 cup brown sugar, packed
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (8.5 ounce) package corn muffin mix (like Jiffy)
  • 1 cup milk
  • 2 large eggs
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir in the tomato sauce, 8 ounce can of tomato sauce, brown sugar, mustard, Worcestershire sauce, salt, and pepper into the skillet with the beef mixture. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally. Spread this sloppy joe filling evenly into the prepared baking dish.
  4. In a medium bowl, whisk together the corn muffin mix, milk, and eggs until just combined. Do not overmix the batter.
  5. Pour the cornbread batter evenly over the sloppy joe filling in the baking dish.
  6. Bake for 20 minutes, or until the cornbread is set and lightly golden brown.
  7. Remove the casserole from the oven and sprinkle the shredded cheddar cheese over the top of the cornbread. Return to the oven for 3 to 5 minutes, or until the cheese is melted and bubbly.
  8. Let the casserole cool for 5 minutes before you cut and serve it.
