  • 2 tablespoons chopped fresh cilantro
  • 12 small corn or flour tortillas
  • For the Creamy Avocado Crema:
  • 1 ripe avocado
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon water (or more, to thin)
  • Pinch of salt
  • For the Slaw:
  • 2 cups shredded cabbage mix
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon sugar

Instructions

  1. Prepare the slaw: In a small bowl, combine the shredded cabbage, mayonnaise, apple cider vinegar, and sugar. Mix well. Set aside in the refrigerator.
  2. Make the crema: Combine the avocado, sour cream, lime juice, water, and salt in a small food processor or blender. Blend until completely smooth, adding a little more water if needed to reach a drizzly consistency. Set aside.
  3. Season the shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper until coated.
  4. Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer. Cook for 2 to 3 minutes per side until pink and opaque. Do not overcook.
  5. Add the lime and cilantro: Remove the skillet from the heat. Pour the lime juice over the hot shrimp and toss with the chopped cilantro.
  6. Warm the tortillas: Warm the tortillas according to package directions, either in a dry skillet or wrapped in a damp paper towel in the microwave.
  7. Assemble the tacos: Fill each warm tortilla with a portion of the seasoned shrimp. Top generously with the creamy avocado crema and a spoonful of the prepared slaw. Serve immediately.
