Make this creamy, cheesy scalloped potatoes and ham casserole in your slow cooker for an easy, comforting family dinner or holiday side dish. This recipe uses simple ingredients for a rich, satisfying bake.

Ingredients

  • 3 lbs Russet potatoes, peeled and thinly sliced
  • 1.5 cups fully cooked ham, diced
  • 1 small yellow onion, thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Lightly grease the inside of your slow cooker insert with cooking spray or butter.
  2. In a small bowl, whisk together the flour, salt, pepper, and paprika.
  3. In a separate large bowl, whisk together the milk and heavy cream until combined.
  4. Gradually whisk the flour mixture into the milk mixture until smooth. Stir in the melted butter. This is your cheese sauce base.
  5. Layer half of the sliced potatoes in the bottom of the slow cooker. Top with half of the diced ham and half of the sliced onion.
  6. Pour half of the cream sauce mixture evenly over the layers. Sprinkle with half of the shredded cheddar and Gruyere cheese.
  7. Repeat the layers: remaining potatoes, remaining ham, remaining onion, remaining cream sauce, and remaining cheese.
  8. Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the potatoes are tender when pierced with a fork.
  9. About 15 minutes before serving, remove the lid and let the excess liquid reduce slightly if the sauce seems too thin. Do not stir.
  10. Serve this hearty ham and potato casserole hot.

Notes

  • For best results, slice potatoes uniformly thin, about 1/8 inch thick. A mandoline slicer works well for this.
  • If you do not have leftover ham, you can use fresh diced ham, but cook it lightly before adding it to the layers.
  • You can prepare the layers the night before, cover, and refrigerate. Add an extra 30 minutes to the cooking time when cooking from cold.
  • This recipe works well as a make ahead scalloped potatoes option if you assemble it and bake it the next day.
