Make this Creamy Italian Sausage Gnocchi Soup for a hearty, comforting meal. This one-pot dish uses savory Italian sausage and pillowy gnocchi in a rich, velvety broth, ready in about 30 minutes.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (6 ounce) can tomato paste
  • 1/2 cup heavy cream
  • 1 (16 ounce) package potato gnocchi
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese, for topping

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
  2. Add the chopped onion, carrots, and celery to the pot. Cook for 5 to 7 minutes, until the vegetables soften.
  3. Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth, diced tomatoes (with juice), and tomato paste. Bring the mixture to a simmer.
  5. Reduce the heat to low, cover, and let the soup simmer for 10 minutes to allow the flavors to meld.
  6. Stir in the heavy cream and the package of gnocchi. Increase the heat slightly to maintain a gentle simmer. Cook for 3 to 5 minutes, or until the gnocchi float to the surface and are tender.
  7. Stir in the fresh spinach until it wilts into the soup, about 1 minute.
  8. Taste the soup and adjust salt and pepper if needed.
  9. Ladle the soup into bowls and top each serving with grated Parmesan cheese before you serve it.

Notes

  • For a slightly thicker broth, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, then stir this slurry into the simmering soup before adding the gnocchi.
  • You can substitute sweet Italian sausage for spicy if you prefer less heat in your comfort food soup.
  • If you do not have fresh spinach, you can use 1/2 cup of frozen chopped spinach, thawed and squeezed dry.
