This Cheesy Baked Pierogi Casserole combines tender pierogi, smoky kielbasa, and sweet caramelized onions in a creamy, bubbly cheese sauce. It is a hearty, satisfying comfort food casserole perfect for family dinners.

  • 1 (12 ounce) package smoked kielbasa sausage, sliced
  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • 1 (16 ounce) package frozen potato and cheese pierogi
  • 1 cup chicken broth
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup sour cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the sliced kielbasa and cook until lightly browned, about 5 minutes. Remove the kielbasa and set it aside.
  3. Add the sliced onions to the same skillet. Cook slowly, stirring occasionally, until the onions are soft and caramelized, about 15 to 20 minutes.
  4. In a large bowl, whisk together the chicken broth, cream of chicken soup, sour cream, thyme, pepper, and salt until smooth.
  5. Stir in 1 1/2 cups of the cheddar cheese and all of the mozzarella cheese into the soup mixture.
  6. Add the frozen pierogi, cooked kielbasa, and caramelized onions to the cheese sauce. Gently fold everything together until the pierogi are evenly coated.
  7. Pour the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  8. Bake for 25 to 30 minutes, or until the casserole is hot throughout and the cheese on top is melted and bubbly.
  9. Let the pierogi casserole rest for 5 minutes before you serve it.

Notes

  • You can substitute the kielbasa with cooked, shredded chicken or bacon pieces for a different flavor profile.
  • If you prefer a slower cooking method, you can assemble this dish and cook it in a slow cooker on low for 3 to 4 hours. Do not add the top layer of cheese until the last 15 minutes of cooking.
  • For extra flavor, sauté 4 ounces of sliced mushrooms with the onions.
