  • 1 cup creamy peanut butter
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the paper.
  2. In a large bowl, beat the softened butter until smooth using an electric mixer.
  3. Add the peanut butter to the butter and beat until fully combined and creamy.
  4. Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until incorporated. Add the vanilla extract with the last cup of sugar. Beat until the mixture is smooth and uniform.
  5. Press the fudge mixture evenly into the prepared baking pan. Use a spatula or the back of a spoon to smooth the top surface.
  6. Refrigerate the fudge for at least 2 hours, or until firm enough to cut.
  7. Lift the fudge out of the pan using the parchment paper overhang. Cut into 1-inch squares.
