2 cups rolled oats
1 teaspoon baking soda
1/2 teaspoon salt
1 cup packed brown sugar
1/2 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a medium bowl, whisk together the rolled oats, baking soda, and salt. Set this dry mixture aside.
In a separate large bowl, whisk the brown sugar and melted butter until combined.
Add the egg and vanilla extract to the sugar mixture and whisk until smooth.
Gradually add the dry oat mixture to the wet ingredients, mixing until just combined. Do not overmix.
Fold in the chocolate chips.
Press the mixture evenly into the prepared baking pan.
Bake for 20 to 25 minutes, or until the edges are lightly golden brown. The center should look set but still slightly soft.
Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
Cut into 16 squares.
Notes
For extra chewy oatmeal bars, slightly underbake them by about 2 minutes. They will firm up as they cool.
You can substitute half of the chocolate chips with chopped nuts or dried fruit for a customized energy bar recipe.
Store these homemade breakfast bars in an airtight container at room temperature for up to 4 days.
