Ingredients
Scale
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
4 ounces sun-dried tomatoes, drained and roughly chopped
3 cloves garlic, minced
1/2 cup dry white wine or chicken broth
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for serving
8 ounces dry pasta (penne or rotini work well)
1/4 cup fresh basil, chopped
Instructions
Season the chicken pieces with smoked paprika, garlic powder, Italian seasoning, salt, and pepper.
Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Reduce the heat to medium. Add the chopped sun-dried tomatoes and minced garlic to the skillet. Cook for 1 minute until fragrant.
Pour in the white wine (or broth) and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
Add the 2 cups of chicken broth and the dry pasta to the skillet. Bring the mixture to a boil, then reduce the heat to maintain a steady simmer. Cook, stirring occasionally, until the pasta is nearly tender, about 10 to 12 minutes.
Stir in the heavy cream and the cooked chicken. Continue to simmer for 2 to 3 minutes until the sauce thickens slightly.
Remove the skillet from the heat. Stir in the 1/2 cup of grated Parmesan cheese until the sauce is smooth and creamy.
Stir in the fresh basil. Taste and adjust salt and pepper if needed.
Serve the Marry Me Chicken Pasta immediately, topped with extra Parmesan cheese.
Notes
For an even richer sauce, use reserved oil from the sun-dried tomato jar instead of olive oil for sautéing.
If you prefer a thicker sauce, let it simmer uncovered for a few extra minutes before adding the cheese.
This dish pairs well with crusty bread for soaking up the extra Parmesan cream sauce.
