2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 cup honey
1/2 cup low-sodium soy sauce
1/4 cup rice vinegar
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon sesame oil
1/2 teaspoon ground black pepper
1/4 teaspoon red pepper flakes (optional, for heat)
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
Wooden or metal skewers (soak wooden skewers in water for 30 minutes if grilling)
Optional vegetables for threading: bell peppers, red onion chunks, pineapple chunks
Instructions
In a medium bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, black pepper, and red pepper flakes (if using). This is your marinade and glaze base.
Place the cubed chicken into a large zip-top bag or shallow dish. Pour half of the honey garlic mixture over the chicken, reserving the other half for basting and serving.
Seal the bag or cover the dish and marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours, as the acid in the vinegar can start to change the texture of the chicken.
If using wooden skewers, remove them from the water. Thread the marinated chicken pieces onto the skewers, alternating with your chosen vegetables or pineapple if desired.
Prepare your cooking method: For Grilling: Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates. For Oven Baking: Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. For Air Fryer: Preheat the air fryer to 375°F (190°C).
Cook the skewers: Grill: Place skewers on the hot grates. Grill for 4-5 minutes per side, basting with the reserved marinade during the last few minutes of cooking until the chicken is cooked through (internal temperature reaches 165°F). Oven: Place skewers on the rack. Bake for 15-20 minutes, flipping halfway through, until cooked through. Air Fryer: Place skewers in a single layer in the basket (work in batches if needed). Cook for 10-12 minutes, flipping halfway through.
While the skewers finish cooking, prepare the thickened glaze. Pour the reserved marinade into a small saucepan. Bring to a simmer over medium heat. Whisk in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens enough to coat the back of a spoon, about 1-2 minutes. Remove from heat.
Once the chicken skewers are fully cooked, brush them generously with the thickened honey garlic glaze.
Serve immediately. You can drizzle extra glaze over the top before serving.
Notes
For the juiciest results, use chicken thighs instead of breasts; adjust cooking time slightly as thighs take longer to cook fully.
If you prefer a thicker coating, reserve 1/4 cup of the marinade before adding it to the raw chicken, and use this for basting only during the last 5 minutes of cooking.
