Make this simple fruit pizza using refrigerated sugar cookie dough for a quick crust and top it with a sweet cream cheese frosting and fresh fruit.

  • 1 package (16.5 ounces) refrigerated sugar cookie dough
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon zest (optional)
  • Assorted fresh fruit for topping (e.g., strawberries, blueberries, kiwi, mandarin oranges)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 12-inch pizza pan or line a baking sheet with parchment paper.
  2. Press the refrigerated sugar cookie dough evenly onto the prepared pan to form a large, flat circle for the crust.
  3. Bake the cookie crust for 12 to 15 minutes, or until the edges are lightly golden brown.
  4. Remove the crust from the oven and let it cool completely on the pan.
  5. While the crust cools, prepare the frosting. In a medium bowl, beat the softened cream cheese until smooth.
  6. Add the powdered sugar, vanilla extract, and lemon zest (if using). Beat until the mixture is light and creamy.
  7. Once the cookie crust is completely cool, spread the cream cheese frosting evenly over the top.
  8. Arrange your desired fresh fruit decoratively over the frosting layer. Slice and serve immediately for best results.

  • For a mini fruit pizza option, press small amounts of dough onto a baking sheet and bake for 8-10 minutes, then top individually.
  • If you want a slightly tangier frosting, add 1 teaspoon of fresh lemon juice along with the vanilla.
