You need a quick, hearty meal for a busy weeknight. This recipe combines tender potatoes, seasoned ground beef, and melted cheese into a satisfying, one-pan dish that tastes like your favorite taco night comfort food.

  • 2 pounds russet potatoes, peeled and diced into 1/2-inch pieces
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the diced potatoes and cook, stirring occasionally, for 8 to 10 minutes until they start to brown and soften slightly. Season with salt and pepper.
  2. Add the ground beef to the skillet with the potatoes. Break up the meat and cook until it is fully browned. Drain off any excess grease.
  3. Stir in the taco seasoning mix and water. Bring the mixture to a simmer, then reduce the heat to medium-low, cover the skillet, and cook for 5 minutes, allowing the liquid to absorb slightly.
  4. Preheat your broiler. Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the potato and beef mixture.
  5. Place the skillet under the broiler for 2 to 4 minutes, watching carefully, until the cheese is completely melted and bubbly.
  6. Remove from the oven and serve immediately. You can add your favorite taco toppings if desired.

Notes

  • For crispier potatoes, you can roast the diced potatoes separately at 400°F for 15 minutes before adding them to the skillet with the beef.
  • If you do not have an oven-safe skillet, transfer the mixture to a baking dish after step 3 before adding the cheese and broiling.
  • Use your favorite store-bought taco seasoning for this quick dinner idea.
