1 pound ground beef
1 (10.75 ounce) can cream of chicken soup
1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
1 cup sour cream
1 packet (1 ounce) taco seasoning mix
2 cups shredded cheddar cheese, divided
1 bag (9.25 ounces) Nacho Cheese Flavored Tortilla Chips (Doritos)
1/2 cup milk
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
Cook the ground beef in a large skillet over medium heat until browned. Drain off any excess grease.
Stir the cream of chicken soup, Ro-Tel tomatoes, sour cream, taco seasoning, and milk into the skillet with the beef. Cook until heated through.
Stir in 1 1/2 cups of the shredded cheddar cheese until melted into the mixture.
Crush the Doritos slightly. You can do this in the bag or pulse them briefly in a food processor.
Spread half of the crushed Doritos on the bottom of the prepared baking dish.
Pour the meat and cheese mixture evenly over the chips.
Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the mixture.
Bake for 20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and immediately top with the remaining crushed Doritos. Serve warm.
Notes
For a chicken version, substitute 2 cups of cooked, shredded chicken for the ground beef.
To prepare this ahead of time, assemble the casserole completely, cover it, and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time if baking straight from the refrigerator.
You can use any flavor of Doritos you prefer for the topping.
