Prepare this creamy sweet potato casserole in your slow cooker to save precious oven space, especially during holiday cooking. This recipe features a smooth base and a crunchy pecan topping.

Ingredients

  • 3 pounds sweet potatoes, peeled and cut into 1-inch chunks
  • 1/2 cup milk
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs, lightly beaten
  • 1/2 cup (1 stick) unsalted butter, melted, plus 2 tablespoons for topping
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup packed light brown sugar (for topping)

Instructions

  1. Place the sweet potato chunks into the basin of a 5-quart or larger slow cooker.
  2. Cook on high for 3 to 4 hours or on low for 6 to 7 hours, until the sweet potatoes are very tender.
  3. Drain any excess liquid from the slow cooker.
  4. Add the milk, 1/2 cup granulated sugar, 1/4 cup brown sugar, eggs, 1/2 cup melted butter, vanilla extract, cinnamon, nutmeg, and salt to the cooked sweet potatoes in the slow cooker.
  5. Use an electric mixer or potato masher to beat the mixture until it is smooth and creamy. Stir well to combine all ingredients.
  6. In a separate small bowl, combine the 1 cup chopped pecans and the 1/2 cup brown sugar reserved for the topping, along with the remaining 2 tablespoons of melted butter. Mix until crumbly.
  7. Spread the sweet potato mixture evenly in the slow cooker. Sprinkle the pecan topping evenly over the sweet potato layer.
  8. Cover the slow cooker and cook on high for 30 minutes or on low for 1 hour, until the topping is lightly browned and the casserole is heated through.
  9. Serve directly from the slow cooker. If you prefer a marshmallow topping, skip the pecan topping and add 2 cups of mini marshmallows during the last 15 minutes of cooking.

Notes

  • For a richer flavor, substitute canned yams for fresh sweet potatoes. Drain them well before mixing.
  • If you want a marshmallow topping instead of pecans, add 2 cups of mini marshmallows during the final 15 minutes of cooking time.
  • This dish is excellent for make-ahead holiday prep since the slow cooker keeps it warm until serving time.
