Make this rich and comforting One-Pan Creamy ‘Crack’ Chicken and Bacon Gnocchi for an easy weeknight dinner. Tender chicken and pillowy gnocchi cook together in a savory, cheesy sauce.

Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, chopped
  • 1 (16 ounce) package potato gnocchi
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 8 ounces cream cheese, cut into cubes
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the chopped bacon and cook until crisp. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  3. Add the seasoned chicken to the skillet and cook until browned on all sides and mostly cooked through, about 5 to 7 minutes.
  4. Add the gnocchi, dry ranch seasoning mix, cream cheese cubes, and chicken broth to the skillet. Stir everything together.
  5. Bring the mixture to a simmer, then reduce the heat to medium-low. Cover the skillet and cook for 5 to 7 minutes, stirring occasionally, until the gnocchi are tender and the cream cheese has melted.
  6. Stir in the heavy cream until the sauce is smooth and creamy.
  7. Remove the skillet from the heat. Stir in the shredded cheddar cheese and Parmesan cheese until fully melted and incorporated into the sauce.
  8. Taste the sauce and add more salt and pepper if needed.
  9. Stir in most of the cooked bacon, reserving some for garnish.
  10. Serve the creamy crack chicken gnocchi immediately, topped with the reserved crispy bacon.

Notes

  • You can substitute pre-cooked rotisserie chicken for the raw chicken breasts to save cooking time. Add the shredded chicken during step 6.
  • For a slightly lighter sauce, substitute half-and-half for the heavy cream.
  • Adding 1 cup of fresh spinach during the last two minutes of cooking adds color and vegetables to this hearty meal.
