1 (15 ounce) can black-eyed peas, rinsed and drained
1 cup frozen corn, thawed
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup red onion, finely diced
1/2 cup fresh cilantro, chopped
1/4 cup olive oil
1/4 cup fresh lime juice
1 tablespoon apple cider vinegar
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 jalapeño, seeded and minced (optional)
Instructions
Combine the rinsed black beans, black-eyed peas, thawed corn, diced red bell pepper, diced green bell pepper, diced red onion, and chopped cilantro in a large bowl.
In a separate small bowl, whisk together the olive oil, fresh lime juice, apple cider vinegar, ground cumin, salt, black pepper, and minced jalapeño, if using. This creates your zesty lime dressing recipe.
