Make a warm, fudgy, high-protein brownie in your microwave in under five minutes. This single-serve mug cake uses cottage cheese for a moist texture and a quick, guilt-free chocolate fix.

Ingredients

  • 1/4 cup cottage cheese (blended smooth)
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sweetener (like erythritol or monk fruit)
  • 1 teaspoon melted coconut oil or butter
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon baking powder
  • Pinch of salt
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. Place the cottage cheese in a microwave-safe mug. Blend it using an immersion blender or whisk vigorously until completely smooth. Remove any large curds.
  2. Add the egg, cocoa powder, sweetener, melted oil, vanilla extract, baking powder, and salt to the mug. Mix until just combined and smooth. Do not overmix.
  3. Stir in the chocolate chips, if using.
  4. Microwave on high for 60 to 90 seconds. Cooking time varies based on microwave wattage; start with 60 seconds and add 10-second increments until the top looks set but the center is still slightly soft for a fudgy texture.
  5. Let the brownie cool in the mug for one minute before eating.

Notes

  • For the smoothest texture, blend the cottage cheese until it resembles Greek yogurt before adding other ingredients.
  • If you do not have a microwave, you can bake this in a small oven-safe ramekin at 350°F (175°C) for 12-15 minutes.
