1 cup full-fat canned coconut milk
1 tablespoon maple syrup or preferred sweetener
1 teaspoon vanilla extract

Instructions
Combine the chia seeds, coconut milk, maple syrup, vanilla extract, and salt in a jar or container with a tight-fitting lid.
Stir the mixture well immediately for about one minute to prevent the chia seeds from clumping at the bottom.
Let the mixture sit on the counter for 5 minutes, then stir again thoroughly. This second stir is key for a creamy texture.
Cover the container and place it in the refrigerator to chill for at least 4 hours, or preferably overnight, until the pudding thickens.
When ready to serve, stir the pudding again. If it is too thick, add a splash of water or more coconut milk to reach your desired consistency.

Notes
For a richer, more tropical flavor, use only the thick cream from the top of a can of full-fat coconut milk.
