1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup Christmas sprinkles (red, green, white jimmies)
1/4 cup extra Christmas sprinkles for rolling
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and vanilla extract until just combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Fold in the 1/2 cup of Christmas sprinkles.
Place the extra 1/4 cup of sprinkles in a shallow dish.
Scoop rounded tablespoons of dough and roll them into balls. Roll each ball completely in the extra sprinkles until coated.
Place the dough balls about 2 inches apart on the prepared baking sheets.
Bake for 9 to 11 minutes, or until the edges are lightly set but the centers still look soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra soft cookies, use a mix of red, green, and white jimmies and nonpareils for the coating.
You can make the dough ahead of time and chill it for up to 3 days. Roll and bake when ready.
