1 pound smoked sausage or Andouille sausage, sliced
1 tablespoon olive oil
1 medium onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 teaspoon Cajun seasoning (adjust for spice preference)
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced sausage and cook until lightly browned, about 3 to 4 minutes. Remove the sausage with a slotted spoon and set aside, leaving any rendered fat in the pot.
Add the chopped onion and bell pepper to the pot. Cook until softened, about 5 minutes.
Stir in the minced garlic, Cajun seasoning, oregano, and black pepper. Cook for 1 minute until fragrant.
Pour in the diced tomatoes (with juice) and chicken broth. Bring the mixture to a boil.
Add the uncooked pasta to the boiling liquid. Reduce the heat to medium-low, cover the pot, and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is cooked al dente.
Stir in the heavy cream and cubed cream cheese until the cream cheese melts and the sauce is smooth and creamy.
Return the cooked sausage to the pot. Stir in the Parmesan cheese until fully incorporated. Cook for 1 minute until heated through.
Taste and adjust seasoning if needed. Serve immediately, garnished with fresh parsley.
Notes
For a spicier dish, add 1/4 teaspoon of red pepper flakes with the other seasonings.
If the sauce seems too thick after adding the cream cheese, add a splash more chicken broth or milk until you reach your desired consistency.
