1 medium head green cabbage
3 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
Remove any loose outer leaves from the cabbage. Cut the cabbage head into four equal wedges, keeping the core intact to hold the leaves together.
In a small bowl, mix the olive oil, minced garlic, salt, and pepper.
Brush the oil mixture evenly over all cut surfaces of the cabbage wedges.
Place the wedges cut-side up on the prepared baking sheet.
Roast for 20 minutes.
Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the top of each wedge.
Return the cabbage to the oven and roast for another 5 to 10 minutes, or until the edges are slightly caramelized and the cheese is melted and lightly browned.
