Instructions
Prepare the chicken coating: In a shallow dish, whisk together the flour, cornstarch, salt, pepper, and garlic powder. In a second dish, place the beaten eggs.
Dredge the chicken: Dip each piece of chicken first into the egg mixture, allowing excess to drip off, then thoroughly coat it in the flour mixture. Press the coating onto the chicken to help it adhere.
Fry the chicken: Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C). Carefully add chicken pieces in batches, ensuring you do not overcrowd the pan. Fry for 5 to 7 minutes, turning occasionally, until golden brown and cooked through (internal temperature of 165°F or 74°C).
Drain the chicken: Remove the crispy chicken with a slotted spoon and place it on a wire rack set over a paper towel-lined baking sheet to drain excess oil.
Make the Bang Bang sauce: In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until completely smooth and combined.
